Red Caviar Pancakes

Description
This is a really simple and gorgeous classic.
Ingredients
| 50 | g | Red Caviar (like “Löjrom” or other) |
| 1 | Potatoe ((or 2 small)) | |
| 2 | T | Sour Cream |
| 1⁄2 | Red Onion (finely chopped) |
Instructions
Thaw the Red Caviar (if frozen)
Add sunflower oil to pan on low heat.
Peel and grate the potatoes then add salt and pepper.
Squeeze the water out of the grated potatoes in your hands or a cloth.
Add a spoonful of grated potatoes at a time to pan and flatten to thin pancake.
Make 4 pancakes
Fry on low heat (barely simmering in oil) for 4 minutes per side till lightly golden brown.
While the potatoes pancakes are frying finely chop the red onions and open sour cream.
(now is a good time to open some nice champagne if you have not already…)
Serving
Place sour cream on potato pancake
Add small spoon of sour cream
Add red caviar on top
Add chopped onion
Notes
This is a really simple and gorgeous classic.
Even great for people that try caviar for the first time.
Enjoy with
Champagne or some other dry sparkling wine or maybe some Petit Chablis!
